Sunday has become lounge by the pool and cook out on the grill day at my house. Not that we haven't been doing it about three to four times a week, but on Sunday we have all day. I swear some days it feels as though we are on permanent vacation, cept the Hub has to work.
Anyway, in honor of Sunday I made dessert. Because, you know, you need a reason to make dessert!
Chocolate Raspberry Bars
1 1/2 Cups flour
3/4 Cup sugar
3/4 Cup butter, softened
1 10 ounce bag frozen raspberries, thawed
1/4 Cup orange juice
1 Tablespoon cornstarch
3/4 cup mini chocolate chips
In small heavy-bottomed saucepan mix thawed raspberries, orange juice and cornstarch cook over medium heat until boiling, stirring constantly. Boil for one minute, remove from heat.
In large bowl mix flour, butter and sugar until combined. Press in bottom of an ungreased 13 X 9 inch pan. Bake for 15 minutes at 350 degrees.
Remove from oven and sprinkle with mini chocolate chips, then gently cover with raspberry mixture.
Return to oven for an additional 20 minutes or until topping is set.
Refrigerate for 1 hour. Cut into triangles. Serve.
