Fruit Salsa and Cinnamon Chips

My intention while the hub was away this past two weeks was to eat healthy and light and maybe drop a pound or two while he was gone. --> Can you see my eyes rolling? <--

Then I checked in at Very Good Things and saw Alicat's Pimento Cheese Spread. Funny thing is that I am not really fond of it? But, as soon as I saw the recipe I craved it. I've been eating it all week with wheat thins, on tortillas with eggs, off my finger..shh. It's good!

Actually, I have made a few things from her site and all have been yummy :)

I made Fruit Salsa and Cinnamon Chips

Cinnamon Chips

4 (7-inch) flour tortillas
Cinnamon and Sugar, mixed

Salsa

2 med Granny Smith apples
1 cup strawberries -- sliced
1 kiwi fruit -- peeled and chopped
1 small orange
2 tbsp packed brown sugar
2 tbsp apple jelly (I used strawberry)

Preheat oven to 400 degrees. For cinnamon chips, lightly spray tortillas with water. Combine sugar and cinnamon and sprinkle over tortillas. Cut each tortilla into 8 wedges; place in single layer and bake 8-10 minutes or until lightly browned and crisp. Remove to cooling rack; cool completely.

For salsa, peel, core, and (*)chop apples into small dice. Dice strawberries and kiwi. Place fruit in 1 quart bowl. Zest orange and juice. Add orange zest, orange juice, brown sugar and apple jelly to fruit mixture, mix gently. Serve with cinnamon chips

(*) I put it all in the food processor and pulsed it....Next time I make it I will use less orange juice. It is good with the cinnamon chips - which I brushed lightly with water and put the cinnamon and sugar in a pie plate and coated the tortillas that way.

I have been grazing for 10 days now - suprisingly Joshua and I have not gone out to eat once. I have not even taken him to Old McDonalds. When the hub calls, he tells me of all the good fresh foods he is eating while in Jamiaca. They are staying at a parish and the lady who runs the kitchen is apearantly taking very good care of them..... I sure hope he isn't getting use to it.....lol
