Last weekend I was at my sisters in Georgia. Usually when I am at my sisters I look at any magazines or new cookbooks she purchased since my last visit. This usually takes place sitting at the breakfast table while she is finishing up….lunch….dinner….. (yes I help with prep and clean-up) I usually come home with two or three new recipes to try. This one caught my eye because it had the word Tuscan in the title. Anything Tuscan usually fills the bill for me. Last night was a rainy night so a warm soup fit the bill.
Oh, and this is a new weight watchers recipe from their 20 minutes quick cook, if you are interested. Four servings, five points, if made as directed. I am not on weight watchers, but I like to eat healthy and their recipes are usually tasty and healthy. Since I am not on weight watchers and I was not in a hurry I modified the recipe just a bit, changes marked with (*). Try to use organic ingredients when available.
Tuscan Chicken Sausage Stew
Olive Oil, twice around the pot (*) I added this to the recipe
1 small onion, medium dice (*) I added this to the recipe
1 clove garlic, minced. (*) I added this to the recipe
6 oz precooked chicken sausage, (preferably artichoke and garlic –
name brand I used was Aidells; kielbasa or Italian sausage would work
1 8 oz package sliced mushrooms (*) I used cremini mushrooms
1 medium zucchini, cubed
Salt and pepper to taste
(*) next time I will add a handful of diced carrots
Sauté these ingredients together until lightly browned, then add
1 14 oz can cannelloni beans, rinsed and drained
1 14 oz can diced tomatoes with roasted garlic and onion
1 8 oz can tomato sauce, (*) I used one with roasted garlic
1/4 cup water, (*) I used chicken stock
2 tsp fresh rosemary, chopped….(fresh rosemary!)
Add and simmer 15 to 20 minutes, then add:
2 cups arugula, coarsely chopped. (*) My hub does not like arugula so I used baby spinach instead.
Cook and additional few minutes to wilt leaves.
(*) I served with a heavy sprinkling of freshly grated parmesan cheese and a baguette.
