It's ten o'clock in the morning and I am eating last night's leftover Turkey Italian Sausage Sub for breakfast. It is so good that it is all I could think about this morning so instead of waiting for lunch, I am eating half now. I think it is my top five of things I like to eat. Maybe even top three, yes, it's that good.
Of course if Turkey Sausage is not available, I am sure these would be just as tasty made with regular Italian Sausage. Oh, and I always get the mild sausage and then add pepper flakes to taste. I like the combination better than just the straight hot sausage.
Italian Turkey Sausage Subs
1 1/2 pounds Mild Italian Turkey Sausage, casings removed
1 large Bell Pepper, red or green, halved and sliced thinly
1 large Onion, halved and sliced thinly
Olive oil
Salt and Pepper
Hot Pepper Flakes, to taste, (optional)
8 slices Smoked Provolone Cheese
1/2 cup Mayonnaise
2 Tbsp. Mustard
4 - 6 or 8 inch, Hoagie or Sub Rolls
Heat a large skillet over medium high heat. Add olive oil. Saute peppers and onions until just starting to wilt. Add sausage. Season with Salt and pepper and red pepper flakes, if using. Continue to cook over medium high heat until peppers are tender and sausage is cooked through, breaking up larger chunks of sausage as it cooks.
Mix mayo and mustard together. Slice hoagie rolls, as if you were cutting them in half lengthwise, but not through the ends, to form a pocket on the side. Cover both insides with mayo mixture. Add one slice of provelone cheese to the bottom. (I cut mine in half and lay each half on the bottom.) Repeat with remaining rolls.
Spoon in 1/4th of the sausage mixture into each hoagie. Top each one with another slice of provolone cheese. Place on baking sheet and bake 5 to 10 minutes at 400 until rolls are crusty and cheese has melted.
Cooks note: Chips and Fresh pineapple is nice with these sandwiches.
