Minestrone Soup

Minestrone Soup

Olive oil
1 onion, chopped
3 stalks celery, sliced
5 carrots, sliced
3 cloves garlic, diced
4 links chicken sausage, optional
2 cups fresh green beans

1 tsp thyme
1/2 tsp sage
1 tsp basil
2 bayleaves
salt and pepper to taste

1 28 oz can tomatoes
8 cups stock ( 1 box veg, 1 box chicken)

2 cups pasta (ditani)
1 large zucchini, diced
1 can cannelloni beans
1 bag fresh spinach

Freshly grated Parmesan cheese

Heat olive oil in large stock pot. Saute onion, celery, carrots until onions are translucent, add garlic and chicken sausage if using. Add seasonings. Add tomatoes (squish up if using whole tomatoes), green beans and stock. Continue cooking over medium low heat until vegetables are tender. Add pasta, zucchini, beans and spinach, cook until pasta is tender.

Serve with Parmesan cheese and crusty bread.
