Tuna Melts

Tuna Melts

2 cans Tuna (your choice, I use albacore)
1/4 cup light mayo
1/4 cup cream cheese, I use light
2 scallions, diced
1 stalk celery, diced
salt and pepper to taste
shredded cheese, (your choice, I used a colby blend)
Thick sliced bread
Butter (or olive oil)

Drain tuna, add remaining ingredients and mix well. Add more mayo if to thick. Spread between bread and sprinkle with cheese. Brush bread with butter (or oil) grill, or press, into grilled sandwiches.
