Slow Cooker Sweet and Sour Chicken

1 1/2 cups sliced carrots
1 large green pepper, chopped
1 medium onion, chopped
2 tablespoons quick cooking tapioca
2 1/2-3 lb chicken, cut into serving size pieces
1 (8 0unce) can pineapple chunks, in juice
1/3 cup brown sugar
1/3 cup vinegar
1 tablespoon soy sauce
1/2 teaspoon instant chicken bouillon
1/4 teaspoon garlic powder
1/2 teaspoon freshly grated ginger -or- 1/4 teaspoon ground ginger
Salt and Pepper to taste

Place vegetables in bottom of slow cooker. Sprinkle with tapioca. Add chicken.

In separate bowl, combine pineapple, brown sugar, vinegar, soy sauce, bouillon garlic powder ginger and seasonings. Pour over chicken.

Cover, cook on low 8 to 10 hours.

Serve over cooked rice.
