Winter Vegetable Casserole

This is my favorite GO-TO casserole for "special family gatherings." I make it for Easter and I usually make it for either Thanksgiving or Christmas. I love it. Love it. It also has a very beautiful presentation. I think I cut the recipe out of an old First magazine like 14 years ago.


Winter Vegetable Casserole

1 Head Cauliflower, separated into flowerets
1 Head Broccoli, separated into flowerets
1 each Red and Green Bell Pepper, cubed
Salt and Pepper, to taste
1 Cup Plain Yogurt
1/3 Cup Mayonnaise
2 Cups Seasoned Croutons
3/4 Cup Cheddar Cheese
2 Tablespoons Melted Butter, or more if desired.

Preheat oven to 350 degrees. Lightly butter large casserole dish.


Par boil cauliflower in salted water for 2 minutes; add broccoli and peppers, cook 3 to 4 minutes longer. Remove from heat and rinse under cold water.

Mix yogurt and mayonnaise, add salt and pepper if desired. Put vegetable mixture in large casserole. Drizzle with yogurt mixture. Crunch croutons coarsely, mix with cheese and sprinkle on top. Drizzle melted butter over all.

Bake for 30 to 35 minutes.
